Mexican coffee originates from South-central to Southern regions of the country. For that reason, coffees from Coatepec and Veracruz are much different from Oaxacan Plumas, which are in turn much different from the southernmost region of Chiapas. Chiapas borders the Guatemalan coffee growing area of Huehuetenango, and you will find similarities between coffees grown in those regions. In general, you can expect Mexican coffee to be light-bodied and mild, with subtle flavors.

About the farm

Café Sierra Azul is a relatively small cooperative that brings together just over 200 small holder farmers living within Southern Mexico’s El Triunfo Biosphere Reserve. With the mission to “Produce Organic Special Gourmet Coffee under strict quality criteria, within the Environmental and Social framework for the most demanding markets, companies and consumers that generate benefits, and create development opportunities for coffee producer communities”. This co op helps small farms and families of this rural town to create a better community by putting earnings in to healthcare, community schools, food assurance and crop sustainability.

All of Savaya’s coffee are roasted in Tucson, Arizona. Our commitment to not only to the highest quality but highest ethical standards is the hallmark of our business and our goal is to have those standards reflected in every cup of Savaya coffee brewed.
